Ingredients:

  • 3 eggs
  • ½ tbsp. ground flaxseeds
  • Some pancetta / bacon / good quality ham or if you like to make it vegetarian grate some courgette / mushrooms
  • ½ dl coconut milk or almond milk or any other unsweetened milk substitute

Method:

  • Set oven to 175c
  • Whisk egg, milk and flaxseeds, leave for 5 minutes
  • Fry pancetta/bacon or grate courgette
  • Put pancetta / bacon / ham / courgette in a small oven proof pan
  • Pour the egg mix on top
  • Bake in oven for 15 minutes, check it towards the end
  • Enjoy with some avocado, salad, sauerkraut
